Our company takes care of all the phases of the entire olive-oil production chain: cultivation, processing, storage, bottling and marketing of the product.

Farming

Today the farm cultivates about 30 hectares of family land, also according to the regulations of organic farming and in absolute respect for the environment.

The olive harvest area is the territory of Calamonaci and neighboring countries. Calamonaci is a small town of about 1500 inhabitants who live mainly of agriculture, surrounded by majestic secular olive trees that grow in hilly area at 300 meters from the level of the Mediterranean Sea.

The variety of these plants is mainly the Biancolilla: green olives of oval shape, very suitable for the transformation in oil, from which is obtained an oil from the fruity light, slightly spicy and very aromatic in which you can feel the almond fragrances, tomato and artichoke combined with fresh grass and green olive flavors.

The tree pruning system allows to obtain the foliage in the shape of large umbrellas to facilitate the collection that takes place exclusively by hand browsing with the help of combs, thus avoiding the abuse of the fruit and respecting the periods of maturation to maintain the high fruity taste of the extracted oil.
In the months of October and November, the hills change their appearance, they are enlivened by presences and under the olive trees enormous cloths, mostly green, give a metaphysical appearance to the countryside. The olives harvested are brought quickly to the mill.

Transformation

The company Sarullo produces and transforms its own olives and those grown by farmers of Calamonaci, Ribera and neighboring municipalities (mainly of the variety Biancolilla and Nocellara del Belice). The olives are harvested, are milled in the shortest possible time to ensure that the oil obtained also maintains its organoleptic characteristics. The most modern olive oil extraction technology is combined with the family tradition to offer an excellent quality product.

The oil company, sensitive to eco-sustainability and eager to offer its customers an oil of superior quality, has invested in the purchase of two plants equipped with the extraction system “two-phase” without adding water (Decanter Multi Phase 8 Leopard Pieralisi) which not only saves considerable water and energy, but also, above all, contributes to the protection of the environment, since it does not produce water from vegetation.

The quality of the oil produced through the installation of two Pieralisi “protoreactors” has been optimized for some years. The protoreactor, the revolutionary machine for kneading the olive paste, allows in fact to obtain more quality in less time, guaranteeing a higher content of polyphenols. Thanks to this investment you get a better oil, richer in polyphenols and more stable over time.

All the plants in the company are also powered by clean energy from renewable sources: zero emissions thanks to photovoltaics that produces the necessary electricity.

Storage

The new crusher is equipped with a storage warehouse at constant temperature where the oil is stored inside stainless steel tanks, waiting to be placed in the bottling cycle.

Bottling

The company has a state-of-the-art bottling system that makes it possible to speed up the packaging times of orders received.

Marketing

The company Sarullo exclusively sells the oil obtained in its mill, thus guaranteeing over the years, the same quality of oil in terms of taste and perfume.
